When the weather is nice, I like to make Fresh Spring Rolls for lunch or dinner. It reminds me of the warm summer days in the US when I can pick my own herbs like green mint, pepper mint, and coriander to put in the spring rolls.

Even though, I live in a tiny apartment in Holland and don’t have a nice big yard to grow my own herbs and vegetables, I try to locate the ingredients so I can have my comfort food at my home away from home.

Fresh Spring Rolls or Yor Khao is one of the Lao dishes that is quick and simple to make but gives me a huge reward feeling and it doesn’t take much to make me happy.
