I made Chicken and Prawn Fresh Spring Rolls (Yor Khaow ຢໍຂາວ or Yor Dip ຢໍດິບ) for dinner the other night. Rather than steaming strips of chicken like I normally do, I decided to slice two chicken breasts in small pieces.
I then cooked the chicken in a pan with no oil and added a few drops of water now and then and used two tablespoons of oyster sauce for seasoning. The prawn also went into a separate pan with no oil and only two tablespoons of oyster sauce for seasoning as well.
Preparing the vegetables and wrapping up the chicken and prawn fresh spring rolls took a bit of time. But it’s worth the effort when the work is all done and to just sit there and enjoying the crunchy and delicious fresh spring rolls, especially on a warm day or night.
